Today I'm making 4 versions of the most famous Summer cocktail: Classic Mojito, Virgin Mojito, Frozen Mojito and Clarified Mojito.

Ingredients

Classic Mojito

  • 8-10 Mint leaves
  • ½ of a medium Lime, cut into 3 wedges
  • 2 tablespoons Granulated sugar
  • 1½–2 oz. / 45–60 ml White Cuban rum
  • Top up with 3 oz. / 90 ml of Club soda
  • Garnish with a Mint sprig
  • Old fashioned or Highball glass with ice

Virgin Mojito

  • 8-10 Mint leaves
  • 1 oz. / 30 ml Lime juice
  • ½ oz. / 15 ml Orgeat (almond syrup)
  • Top up with 4 oz. / 120 ml of Indian Tonic
  • Garnish with a Mint sprig
  • Old fashioned or Highball glass with ice

Frozen Mojito

  • 4 oz. / 120 ml White rum
  • 2 oz. / 60 ml Lime juice
  • 1½ oz. / 45 ml Rich simple syrup (or 2 oz. / 60 ml of Simple syrup)
  • 8-10 Mint leaves
  • A handful of ice
  • Garnish with a Mint sprig
  • Blender, Margarita glass

Clarified Mojito

  • 8-10 Mint leaves
  • 1 oz. / 30 ml Lime juice
  • 2 oz. / 60 ml White rum
  • 1 oz. / 30 ml Simple syrup (or ⅔ oz. / 20 ml of rich simple syrup)
  • 1 oz. / 30 ml Milk (not ultra-pasteurized)
  • Top up with 1-2 oz. / 30-60 ml Club soda
  • Garnish with a Mint sprig
