2½ oz. / 75 ml London Dry (or Old Tom) Gin
1 oz. / 30 ml Sweet Vermouth
⅓ oz. / 10 ml Maraschino liqueur
2 dashes Orange bitters
Garnish with Lemon peel
Stir, large cocktail glass
Tom Collins
1½ oz. / 45 ml Old Tom or London Dry Gin
1 oz. / 30 ml Lemon juice
½ oz. / 15 ml Rich Simple syrup
Top up with 3 oz. / 90 ml Club soda
Garnish with Lemon wheel
Shake, Collins glass with ice
Knickerbocker
2½ oz. / 75 ml Aged rum
1 teaspoon / 5 ml Orange Curacao or Triple sec liqueur
