French 75

  • 1 oz. / 30 ml Gin
  • ½ oz. / 15 ml Lemon juice
  • ½ oz. / 15 ml Simple syrup
  • Top up with 3 oz. / 90 ml Dry Sparkling wine
  • Garnish with Lemon peel
  • Shake, Champagne glass

Martinez

  • 2½ oz. / 75 ml London Dry (or Old Tom) Gin
  • 1 oz. / 30 ml Sweet Vermouth
  • ⅓ oz. / 10 ml Maraschino liqueur
  • 2 dashes Orange bitters
  • Garnish with Lemon peel
  • Stir, large cocktail glass

Tom Collins

  • 1½ oz. / 45 ml Old Tom or London Dry Gin
  • 1 oz. / 30 ml Lemon juice
  • ½ oz. / 15 ml Rich Simple syrup
  • Top up with 3 oz. / 90 ml Club soda
  • Garnish with Lemon wheel
  • Shake, Collins glass with ice

Knickerbocker

  • 2½ oz. / 75 ml Aged rum
  • 1 teaspoon / 5 ml Orange Curacao or Triple sec liqueur
  • ½ oz. / 15 ml Raspberry syrup
  • ½ oz. / 15 ml Lime juice
  • Garnish with Squeezed Lime half and a Raspberry
  • Shake, Old fashioned glass with pebble ice

New York Sour

  • 2 oz. / 60 ml Bourbon
  • 1 oz. / 30 ml Lemon juice
  • ¾ oz. / 22 ml Simple syrup
  • 1 Egg white (optional)
  • Layer ½ oz. / 15 ml Red wine on top
  • Shake, Old fashioned glass
